Shopska Salad

Shopska salata is the most famous of all traditional salads in the Bulgarian cuisine. It features in every important meal whether you are at home or in a restaurant. If combines all the key vegetables with feta to produce a masterpiece that explodes in your mouth.

Ingredients

4 – 5 tomatoes

1 large telegraph cucumber

3 red or green capsicums

1 onion

200 grams feta cheese

Sunflower oil to taste

Vinegar to taste

Salt

Fresh parsley to garnish

Steps

  1. Grill the capsicums – this is key to making a traditional shopska. You can do this on a BBQ or under a hot grill in the oven. The idea is that the skin gets charred.
  2. Once the capsicums are grilled, put them in a plastic bag to rest.
  3. Take them out after a few minutes and peel the skins gently and remove the seeds.
  4. Slice the tomatoes, cucumbers, onion and peeled peppers and place in a salad bowl.
  5. Add salt, oil, vinegar, chopped parsley and mix.
  6. Top with grated feta cheese.

You can also add a couple of grilled and peeled chilies to spice up the salad.
