Garlic and Coriander Pipis

Garlic and Coriander Pipis is a dish that reminds me of the vibrant spirit of Mozambique and my brother-in-law Paulo who craftily makes this dish every time we are together.

Ingredients

2 kg of Pipis

Large bunch of fresh coriader

15 garlic cloves

50 ml Olive oil

Salt – to taste

Steps

Before you begin – keep in mind that the cooking time for this dish is no more than 5 min and it is best eaten right away.

1. Prepare the ingredients, soak the pipis for about 30 min to remove any sand

2. Bring a large pot of water to boil.

3. While that is happening chop the coriander (including the roots finely, leaving the leaves whole

4. Peel and crush the garlic with some salt

5. Pour about 50 ml of olive oil into a frying pan and heat until very hot

Now you are ready to cook – you should cook both the pipis and the herbs at the same time for best results

6. Put the pipis in the boiling water and bring to boil. Once they start boiling, leave for 1 min and then drain the water.

7. Add the garlic to the oil and fry for 30 seconds only

8. Add the coriander to the garlic and fry for another 30 sec

9. Pour the garlic and coriander onto the drained pipis and mix thoroughly

10. Serve with fresh bread and some great Mozambican music
