Banitza

Banitza is another Bulgarian classic that everyone in the family loves. It is really easy to make and can be eaten for breakfast or as a snack. Paired with a salad it makes a great main as well. This is the only breakfast I have when I go back home. It is best served with a glass of Airan, plain yoghurt diluted with water.

Ingredients

1 pack of filo pastry – 375 g

5 eggs

200 ml of yoghurt

300 g feta – crumbled

100 g butter – melted

Steps

1. Preheat the oven to 190 C and get the ingredients ready.

2. Add the yoghurt and eggs to a bowl.

3. Mix them very loosely.

4. Crumble the feta and mix that in.

5. Coat the dish with a little butter and get 3 sheets of filo and cover the bottom. Don’t need to be perfect!

6. Spoon some of the mixture on top, again no need for perfection, this will all get mixed in while baking.

7. Continue layering 3 sheets of file with the mixture. The last layer can be just one sheet. Cover that with the melted butter.

8. Bake in the over at 190 C for about 50 minutes.

9. It is ready when it has risen in the oven and it looks golden brown on top.

10. Cut into slices and enjoy!
