Fluffy rice
Ingredients
1 tablespoon of oil
1 cup of basmati (or any other) rice
2 cups of boiling water
Salt to taste
Equipment
Pot (about 4-5 cups in volume) with a lid
Steps
1. Boil water to have at least 2 cups full.
2. Measure 1 full cup of rice. Basmati is best for Indian dishes, however this will work for any rice.
3. Add the oil and rice to the pot and stir. Fry the rice for a 5 minutes while stirring. You will see some of the grains become an opaque white when ready.
4. Remove the pot from the heat and leave for a minute or so – this will let it cool down a little for the next step. Pour 2 cups of boiling water over the rice. Be careful as the steam can burn if the rice is too hot.
5. Return to the heat and cover. Bring to the boil and then decrease the heat so that it just simmers.
6. Let it simmer for about 20 minutes. When ready the should have fully evaporated. You can check that by parting the rice with a fork and checking that there is no water at the bottom. Ready to serve!
